Chipotle Lime Squash
Ingredients
- 2 Tablespoons olive oil
- 2 pounds butternut squash, cubed
- 2 teaspoons ground chipotle powder
- 1 teaspoons salt
- Zest and juice from 2 limes
- 1/3 cup cilantro
Directions
Heat the oven to 420° F.
Toss all the ingredients together in a large bowl. Pour onto lined baking sheets and arrange in a single layer. Bake until tender and lightly browned, 25-30 minutes.
